Why do I include sweet potatoes in my diet?
Is not my intention to provide a detailed list of all the health benefits or the properties of this great vegetable. Google already supplies helpful resources with a complete profile.
For practical purposes, I want to share with you why sweet potatoes are essential in my diet:
- Calorie dense food: 100 grams provide around 20 grams of carbohydrates
- It seems like my body digests them well
- Alternate them with rice and vegetables as my source of carbohydrates
- Are full of vitamins and minerals
- Provide a good amount of fiber
- Taste delicious and are fast and easy to cook. I am all about avoiding elaborated recipes as I don’t have much time to spend in the kitchen. It’s hard to make them taste bad
INGREDIENTS:
- Sweet potatoes – 2-3 medium
- Extra Virgin Olive Oil – 1 serv (≈ 14 gr.) / lb. of potatoes
- Salt – to taste
- Black pepper – to taste
INSTRUCTIONS:
- Rinse, peel and cut the potatoes
- Mix in a bowl with salt, pepper, and olive oil
- Add to air fryer @ 400℉ for around 25 minutes
- Switch tray placement or stir them halfway through the cooking time
- Before the timer goes off, check for softness with a fork
- Adjust time if needed
