Healthy Air-fried Sweet Potatoes

Why do I include sweet potatoes in my diet?

Is not my intention to provide a detailed list of all the health benefits or the properties of this great vegetable. Google already supplies helpful resources with a complete profile.

For practical purposes, I want to share with you why sweet potatoes are essential in my diet:

  1. Calorie dense food: 100 grams provide around 20 grams of carbohydrates
  2. It seems like my body digests them well
  3. Alternate them with rice and vegetables as my source of carbohydrates
  4. Are full of vitamins and minerals
  5. Provide a good amount of fiber
  6. Taste delicious and are fast and easy to cook. I am all about avoiding elaborated recipes as I don’t have much time to spend in the kitchen. It’s hard to make them taste bad

INGREDIENTS:

  1. Sweet potatoes – 2-3 medium
  2. Extra Virgin Olive Oil – 1 serv (≈ 14 gr.) / lb. of potatoes
  3. Salt – to taste
  4. Black pepper – to taste

INSTRUCTIONS:

  1. Rinse, peel and cut the potatoes
  2. Mix in a bowl with salt, pepper, and olive oil
  3. Add to air fryer @ 400℉ for around 25 minutes
  4. Switch tray placement or stir them halfway through the cooking time
  5. Before the timer goes off, check for softness with a fork
  6. Adjust time if needed
